On SiteBuilder and other questions

I need to find a new host for our community website. I use a G4 Mac under OS10.5.2. First off, are there any problems in using your SiteBuilder with my computer? I have been trying to use the SiteBuilder, but I have been having a few problems: 1.) In the demo, it looked like I could change the boilerplate banner on the template. I attempted to upload an image, but the banner did not change. I was able to upload my logo. 2.) It does not seem to be possible to insert any images from my computer with the exception of the logo. 3.) Is is possible to insert any HTML code? I was trying to put up a sticky for our local weather station. I could not see any way to do it.
If I were to create a site on my own computer, using my own software, could I upload it, and add features like WebCalendar (from Fantastico); could I add image galleries?
How about restricted access? I would like the capability to restrict access to certain content to only members of our community. Can I do this on HostGator?
