Question on Transfering from another hosting Company

I currently have several sites hosted at another hosting company. Due to downtime and slowness, I am considering moving to hostgator. If I purchase a baby account using a domain (www.somedomain.com) will I be able to leave the DNS servers pointed to the old host and access the hostgator account through IP address until I change the DNS info.

The reason for this is the hosting is using moodle for several classes. I do not want any down time. I want to setup the sites on host gator. then move the data and test the site to be sure it is working well. Then at the most advantious time, I will change the DNS server info and go live on hostgator.

Does HostGator also move the MYSQL databases as part of this process?

Best way: just post a ticket at support@hostgator.com

transfer the hosting, not necessary the domains.
point the domains to hostgator NS given.
