When phpbb tries to send a mail, like when a new user registers or a notification that there is a new message, i get this error in the admin mail:

I am having this same problem, most emails (if not all) are bouncing back with 'unrouteable mail domain' - what's up?

Have you tried setting up the mail server option, where it sends through the mail server? Sometimes the php-email code doesn't work. Also, the host must have that enabled on the server. My hosted server, ns7 and ns8.hostgator has it enabled. I am pretty sure its enabled on all servers though.

I have set it up through SMTP, though to me that's not a very acceptable fix.
Why would this server be different from others? ... |

I am not sure. Have you contacted support staff, here at host gator? Maybe you should try that.
