What do you guys use for offsite backups? RSYNC? Do you take cpanel full backups or simply backup the important files?

HG customers can and should do backups themselves via any method they feel comfortable with, for example via cpanel. Some here use offsite backups like bqbackup.com, they use rsync. HG Also does weekly backups but it costs to have them restore, so you are best doing your own.
