Is there a way to encript the email address in my form mail so that spam programs can not spider my form and detect the email address and use it for spamming purposes?

Yes. Use the form mail script from here, http://nms-cgi.sourceforge.net/scripts.shtml and put the addresses within the form itself, NOT in your form header. I use it all the time.
