I have a domain registered with Go Daddy and they also host the website and my email. I'm considering moving the hosting here. It looks like I can easily transfer my domain hosting here, but how does transferring email work?

Thanks, but I actually would be creating the new site from scratch. I'm concerned about email though. How does email transfer work?

If you use that form I linked to there is space for you to specify what you would like them to transfer, such as your email.

email for a domain goes to whatever host a domain record points to. so email sent to your domains before you transfer go to your godaddy email box. after you've changed the domain record to reflect your new host and it propogates, the email goes to your hostgator email box.
godaddy is not a cpanel host, so i wouldn't expect existing email on the server will not be transferred by using the transfer forms. i'm not even sure they will attempt transferring it if you don't use a cpanel host, but i digress. however, if you set your existing email up in a local email client (i.e. outlook or something) as imap, you could sync with your email account while on godaddy, and then resync with the same email addresses after your site is moved and the email address has been set up at hostgator (AFTER the domain propogates). since imap email will sync what you have locally with the server, this would effectively move what you have in your inbox/mail folders locally to your new hg account. at that point, you could either leave the account imap, or set up the account again as pop and delete the imap if you prefer, while retaining your email locally. there might be/probably are other ways to approach it, but i would consider this one of the more simple ones.
