Generally you need to form some sort of accountability between you and the person that is being hired. The best way to do this is to have an agreement in writing stating your expectations of them. You should also have a confidentiality agreement so that they know what you expect to be kept confidential and the amount of ownership that you expect for the money you are paying. eg. if you pay a designer hourly - then you must clearly tell them that you expect to be the owner of the designs.

Just try to remember not to assume anything. Not all people are honest to start off with and then a lot of others will do the wrong thing if given the chance. If you assume that a person knows something, then they can easily take the easy road and say "oops" you should have told me.
One thing I do is give each person their own access. This way, most things are logged for that user and you can also tell the user that it works this way, without them freaking out or assume that you are 'watching them'. Small things like this help their conscience without hurting their feelings...

my 2cents...
