Default default websitewelcome.com
How do I change it so that when someone signs up the default name servers show mine and mot websitewelcome.com also how do I change it so the email headers show my info and not vito.websitewelcome.com

You can change the DNS settings in WHM, section DNS Functions. You can change existing zones or the templates (be sure you know what you're doing).
