Default Encoding for Mysql

I am seriously considering signing up with Host Gator for Reseller Hosting.

I have a question.

What is the default encoding for Mysql?

If you create a table without specifying what encoding is...what will be the Collation?

I would like to know this answer as well, I hate seeing latin1_sweedish as the default
