You would give Host Gator your log in details to your control panel on your old host and they will pack up and transfer all your files to your account here.
How long it takes would depend on how large your site is and how big the cue is for transferring sites but usually the whole process is reasonably quick |

Just remember that transfers take twice a long as you think they will and never are done right the first time. That way if HG gets it right the first time and done quickly, you'll be happy and if they don't, you'll be expecting it.

Well if his old host is using cpanel then the transition should be smooth. I remember when i moved to hostgator, all i did was load up the back ups in cpanel change DNS and some minor changes to the sql databases.
