I am already a HostGator client I have a babycroc account but waiting for admin to approve me here. My question is that at the moment I have a PHPBB forum hosted by HostGator and I backup everyday through the admin panel on the forum. I am going to change to IP board software soon and have asked them about backing up and they tell me to do it through my CPanel on HostGator. As I have never done this before can you please tell me how to do it.

Thank you for that but as I have a fairly active forum I back up everyday, it seems a lot to backup the entire thing which is a forum and 3 blogs when the main thing is the forum database. Is there any other way?

depending on the type of the forum, doing daily database backups (which is provided in IPB admin I believe) should be enough.
A weekly cpanel backup will make things better.
